Bar Dijous runs as a cooperative of roughly 25 members. The chef behind it, Joan Vallès, was named Time Out Barcelona's 'xef revelació del 2025' (breakthrough chef of 2025). The casa de menjars opened in March 2026 at Carrer del Consell de Cent 93, on a recently pedestrianised stretch of the Esquerra de l'Eixample.
Vallès, previously executive chef at Monocrom and Gegant de Poblenou, frames the project's philosophy as one that 'seeks to avoid unnecessary personalism'. On sourcing: 'Tinc els mateixos proveïdors des de fa deu anys i tot és de proximitat' ('I've had the same suppliers for ten years and everything is local').
The menu spans cold openers (patata i mongeta, ensaladilla russa, esqueixada de bacallà), cabdells with hazelnut vinaigrette and a vegetable mille-feuille, spoon dishes (capipota, fricandó amb moixernons, cassola de guisat de xai, bacallà a la llauna), gratinéed macarrons (€12), a weekly legume dish (€10), suquet de peix (€19), beef middling (€43), and a flam to finish. The lunch format adds an appetiser, water, bread, and coffee for €4 on top of the main. Natural wine starts at €3 per glass, draught beer at €1.70.
