Biography
Early years
Pardo grew up inside La Bonaigua, the family restaurant his parents opened in Sant Just Desvern in May 1990. He completed a higher degree in cooking at CETT in Barcelona and did internships at the three-Michelin-star El Celler de Can Roca and at Quique Dacosta.
Career
Pardo worked at Ca la Nuri before returning to the family restaurant. From 2015 he led a renovation process that brought renewed and creative elements into the menu, with a commitment to top-quality meats and fish — he visits MercaBarna daily for fish and seafood and works with Cárnicas Guikar for meat. His mother Sonia continues to cook alongside him every day, as she has since 1990.
Philosophy
Pardo's cooking combines traditional Catalan cuisine — snails, cod, rice, tuna — with the vanguard technique he absorbed in three-Michelin-star kitchens. The family format keeps the restaurant rooted in flavour and memory while the kitchen pushes its execution.
