Of Laotian origin and trained in France, he built more than two decades of experience in Japanese cuisine, training at Kashiwaya in Osaka and working alongside chef Takeo Yamazaki at Yoshi, part of the Joël Robuchon group. Early years

Singharaj is of Laotian origin and trained as a chef in France, where he built more than two decades of experience in Japanese cuisine before being named the 2024 Champion de France de Sushi.

Career

He trained at Kashiwaya in Osaka and worked alongside chef Takeo Yamazaki at Yoshi, part of the Joël Robuchon group, building more than two decades of experience in Japanese cuisine with a focus on omakase. In December 2024 he joined Toki as head chef, succeeding founding chef Tadayoshi Motoa.

Philosophy

At Toki, Singharaj designs the Aki no Omakase tasting menu daily, built around Japan's seasonal market and served as 28 to 30 courses. He applies the ikejime method to ingredients such as red tuna to bring out their qualities.
