Rubén Hernández Mosquero, from the village of Reina in Badajoz, is the chef-owner of EMi, the tasting-counter restaurant he opened in Madrid's Gaztambide neighbourhood in July 2025. After close to 15 years working abroad, most recently as head of R&D at Atomix in New York, he came home to open his own project, which he named for his late brother Emilio. EMi won a Michelin star in the 2026 Guide within four months of opening, alongside a Repsol Sol and Metrópoli's Restaurant and Chef Revelación awards.

Biography

Early years

Mosquero is from Reina, a village in Badajoz province in Extremadura, and was raised in Alcobendas, near Madrid.

Career

He spent close to 15 years working in kitchens abroad before opening EMi, including Noma and Geranium in Copenhagen, Azurmendi near Bilbao, Il Ristorante Luca Fantin in Tokyo, and Minibar by José Andrés in Washington D.C. His last salaried post before returning to Spain was at Atomix in New York, where he was head of research and development and helped the restaurant climb from No. 118 to No. 6 on The World's 50 Best Restaurants list, earning recognition as Best Restaurant in North America twice. He opened EMi at Calle de Gaztambide 64 in Madrid on July 29, 2025, naming it for his late brother, Emilio, investing more than 500,000 euros of his own money with no outside partners. By November 2025 he'd gone 15 months without drawing a salary from it. Four months after opening, EMi received a Michelin star in the 2026 Guide, presented at the gala in Málaga, along with a Repsol Sol, La Liste's Best New International Opening, the Tapas Magazine Gold T, and the Revelation Chef and Revelation Restaurant awards at the 2025 Premios Metrópoli.

Philosophy

EMi's cooking applies New Nordic Cuisine principles and Japanese and Korean techniques to seasonal Iberian ingredients such as ibérico pork and game, alongside his own Extremaduran roots. On the Michelin star, Mosquero has said it "doesn't change our daily operations in any way, since the project was managed with a determined number of clients and a price that hasn't been modified by any award," adding that the team keeps "doing the same thing day after day."
