Oswaldo González Herce is the head chef of Los 33, the wood-fired Argentine-Uruguayan steakhouse he has run in Madrid's Justicia neighbourhood since it opened in May 2022. Biography

Early years

González grew up between Betanzos, in Galicia, and Madrid, with no family background in cooking; by his own account, he and his brother are self-taught, learning the trade in kitchens rather than at culinary school. He left Spain at 18 for London, where he started as a dishwasher at a Michelin-starred Indian restaurant and worked his way up to chef over five years there, drawn in, he's said, by "the demands, the shouting and the perfectionism they asked of chefs."

Career

He went on to cook at Astrid y Gastón in Peru and served as head chef of a Spanish restaurant in China, then spent time in Barcelona before settling in Madrid. His kitchens in Spain have also included DSTAgE and TriCiclo. He has been head chef at Los 33, the Argentine-Uruguayan wood-fired steakhouse on Plaza de Salesas in Madrid's Justicia neighbourhood, since it opened in May 2022. His brother, Bruno González Herce, runs Llama Inn, a Peruvian restaurant nearby that has also been recognized in the Michelin Guide.

Philosophy

González runs Los 33 as what he calls a "casa de comidas" (familiar, recognisable dishes rather than inventive ones) built around the grill: roughly 80% of the menu passes over embers, with smoke as the thread connecting the dishes. Of the ambition behind it, he's said plainly that they are "just feeding people, not sending an astronaut to the moon."
