Marian Reguera is the Madrid-born chef-owner of Taberna Verdejo, a tavern in the Salamanca district built on escabeches, salazones, and ahumados she learned in her family's tavern near Las Ventas. She worked at Hotel Santo Mauro, Hotel Palace, Casino de Madrid, and the restaurants El Arce and El Olivo before opening Verdejo in late 2012 with partner Carmen Moragrega. Reguera later moved it to its current, larger space on Calle General Díaz Porlier. Taberna Verdejo holds two Repsol Soles, the first awarded in 2019 and a second in 2025.

Biography
Early years
Reguera grew up around her family's tavern near the Plaza de Toros de Ventas in Madrid, learning traditional techniques such as escabeches, salazones, and ahumados from her mother and aunts. The restaurant's name comes from her mother's maiden surname, Verdejo.
Career
Before opening her own restaurant, Reguera worked at Hotel Santo Mauro, Hotel Palace, Casino de Madrid, and the restaurants El Arce and El Olivo. She opened Taberna Verdejo in late 2012, during Spain's economic crisis, with business partner Carmen Moragrega, who had left a career in psychology to join the venture. Moragrega died in a motorcycle accident in October 2019, and Reguera went on to relocate and expand Verdejo to its current site on Calle General Díaz Porlier in the Salamanca district. She also completed an enology master's degree in Jerez, reflected in the tavern's Jerez-style fortified-wine bar at the entrance.
Philosophy
Reguera describes the restaurant's spirit as "a esta casa se viene a disfrutar" (this house is for enjoyment) and says the kitchen works "con mucho cariño para seguir mejorando" (with care, to keep improving), built around seasonal, largely made-to-order traditional Spanish dishes.
