Morales and Álvaro Castellanos, who met through a mutual friend in a wine-tasting group, opened the first Taberna Arzábal on 6 May 2009, a six-table venue in Madrid's Retiro district financed with two €30,000 loans during Spain's financial crisis. The pair went on to open further Arzábal venues, including El Jardín de Arzábal inside the Museo Reina Sofía, Arzábal Market at Mercado San Miguel, and Arzábal Bernabéu, alongside other concepts such as the 'A' Japanese Kiritaka bar, the Lovnis combined-plate concept, and their own Terrible wine label (Ribera del Duero and Rueda). During the COVID-19 pandemic, Morales and Castellanos took part in José Andrés' #ChefsForSpain relief effort through World Central Kitchen.
