Erauzkin is a Basque chef who trained in Paris and built his career through more than 25 years of cooking in Spain — alongside a parallel career as a cookbook author with over a dozen titles to his name.
Career
Erauzkin opened Espacio UMA in Barcelona's Eixample — a 16-seat restaurant designed entirely around the tasting-menu format. The kitchen serves three tasting parallels: UMA Essence (a shorter, more accessible introduction), UMA Classic (the full haute-cuisine experience), and UMA Grand Gourmet (an expanded, more personalised menu). There is also a chef's table inside the kitchen.
Philosophy
Erauzkin's cooking applies modern technique to product-led Basque and Mediterranean cuisine, structured into long multi-course tastings — 12 savoury courses and two desserts at the heart of the Classic menu, with snacks framing the meal.
