Zgardan leads the kitchen at Restaurante Alma inside Hotel Alma Barcelona on Carrer de Mallorca, 271, a neoclassical building from the early 20th century set on the site of the 1853 Campos Elíseos pleasure gardens. The restaurant runs a sheltered outdoor dining room under century-old trees in central Eixample, and sources some of its produce from a vegetable garden the restaurant maintains in Cabrera de Mar. Restaurante Alma carries one Repsol Sol.
Philosophy
Zgardan describes his cuisine as 'creative, simple and emotional', classic dishes reinvented with a personal touch, prepared with fresh local product. Signature dishes include cep served Italian-style with oil, pine nuts and pine-nut praline; and pheasant with fennel and cabbage.
