### What counts as a 'new' restaurant on this list?

We only included restaurants with a confirmed 2025 or 2026 opening date, either from the venue's own site and FAQs or from a dated news article. A 'trendy' tag from diner reviews wasn't enough on its own to count as new, and it ruled a number of otherwise-qualified candidates out.

### What is the Restaurante Revelación award?

It's a category at Madrid's annual Premios Metrópoli awards. Two restaurants on this list were recognized in it in 2025: EMI won outright, and Tetsu was shortlisted.

### Does a Michelin star mean a restaurant just opened?

No. The Michelin Guide added two of this list's restaurants, Ramón Freixa Atelier and EMI, to its 2026 edition, but Michelin recognition and a restaurant's actual opening date are separate facts. We checked each venue's own opening date rather than assuming Michelin timing tracks newness.

## How we built this list

We started from a set of Madrid restaurants flagged as 'trendy' by diner reviews, but a trendy tag isn't proof a place is new, so we didn't treat it as one. Instead we checked each venue's own site, FAQs and 'good to know' notes for an actual opening date, and cross-checked against outside sources where we had them: the 2025 Premios Metrópoli Restaurante Revelación shortlist, the Michelin Guide's 2026 additions, and La Gastronoma's July 2026 roundup of new Madrid restaurants. Only restaurants with a 2025 or 2026 opening date confirmed one of those ways made the list. That left us with 11 restaurants rather than a rounder number: several other restaurants we looked at either opened well before 2025, including some longstanding restaurants that simply changed chefs or relaunched recently (we've noted a couple of those separately rather than counting them as new), or didn't have a confirmed opening date anywhere we could check. We'd rather publish an honest 11 than pad the list with guesses.

Ramón Freixa opened Atelier in July 2025 on Calle Velázquez, after closing his long-running two-star restaurant at the Hotel Único. It's his most personal room: one U-shaped table for a maximum of ten diners a night, facing an open kitchen, where he works both the kitchen and the dining room himself. Ramón Freixa split his return into two restaurants on the same building rather than one, Rubén Mosquero came home from a run of Michelin-starred kitchens abroad to open EMI. Michelin and the Premios Metrópoli both moved fast on some of these: EMI won a star and the Restaurante Revelación award within about a year of opening, and Ramón Freixa Atelier picked up two stars in its first Michelin cycle. Other openings, like Taberna Montalbán and Taberna Gallega Garelos, sit at the more neighbourhood end, without awards attached yet, but with confirmed 2025 or 2026 opening dates of their own.
