## How we built this list

We started from the Madrid restaurants we've profiled, filtering to restaurants that are fully vegan, fully vegetarian, or built a dedicated vegan or vegetarian tasting menu, and checked every claim against each venue's own published detail: its about text, tasting-menu descriptions and carta. We then read the editorial coverage that actually names Madrid vegan and vegetarian restaurants, including Eating Europe's blog, ConversaSpain, and inmigrantesenmadrid.com, and cross-checked addresses to confirm we had the same venue rather than a same-named one elsewhere in the city. Several restaurants that keep showing up in that coverage, including Mad Mad Vegan, B13 Bar, Viva Burger and Artemisa, don't have a Guidavera page yet, so we've left them off rather than write around a gap. We also checked every candidate's own menu for meat or fish before including it: a couple of matches turned out to serve meat, seafood or fish despite a 'vegetarian-friendly' tag, and we dropped them rather than mislabel them.
