DiverXO, Dabiz Muñoz's three-Michelin-star restaurant in Hispanoamérica, rewrites its tasting menu every single service rather than following the seasons. A few kilometres south, inside the flamenco tablao Corral de la Morería, chef David García cooks one fixed tasting menu, Menú Compás, for no more than eight guests a night across four tables. And in Mercado Vallehermoso, a market stall called Tripea runs an eight-course Peruvian-Asian tasting menu for 60 euros. ### What is a menú degustación?

A menú degustación, Spanish for tasting menu, is a fixed sequence of courses set by the kitchen rather than an à la carte order. It's the format most of Madrid's Michelin-starred restaurants use to show a chef's range across a single sitting, and some, like Corral de la Morería Gastronómico, build their entire identity around a single version of it.

### How much does a tasting menu cost in Madrid?

On this list, prices run from Tripea's 60-euro market-stall menu to Coque's 450-euro menu. Most kitchens land between 75 and 190 euros, and several, including CEBO, Omeraki and Ikigai, run more than one tier so diners can choose a shorter or longer sitting at different price points.

### What's the difference between omakase and a tasting menu?

Omakase is a Japanese-specific version of the tasting-menu format, where the chef chooses every course with no printed sequence for the diner to see in advance. Ikigai on this list runs its cooking this way, describing the menu as a sensory experience the kitchen says is never repeated twice.

### Do all tasting menus require the whole table to order the same one?

Not always, but some kitchens do require it. Yugo the Bunker, a Michelin-starred Japanese restaurant in Barrio de las Letras, has every diner at a table order the same tasting menu, a house rule meant to keep the pacing consistent. Most restaurants on this list let you mix and match if you're dining with others.

### Which Madrid tasting menus come with wine pairing built in as an option?

Several do, as a separate add-on rather than part of the base price. Corral de la Morería Gastronómico offers two pairing tiers, at 155 and 255 euros, on top of its 105-euro menu, and Gioia's NESSO menu adds a 45-euro pairing, according to a June 2026 OK Diario report.

## How we built this list

We built this list by reading Guía Repsol's roundup of Madrid tasting menus from December 2023, a Madrid Secreto list from April 2024, and OK Diario and Eat & Love Madrid coverage from 2026 and 2019, then checked every restaurant named against our own venue data. A restaurant only made the list if its own menu data or an about section confirmed a real, current tasting menu, not just a mention in a source article. That standard cost us a few names, including Kappo, which multiple sources cite but which isn't in our restaurant database yet, so it's a gap rather than an entry. We ordered the list by how central the tasting-menu format is to each kitchen's identity, weighed against source consensus and Michelin or Repsol recognition, rather than by overall restaurant ranking alone. A couple of entries, like Saddle and Kuoco, publish only partial menu data on their own sites, so we've cited the dated source article for anything their own published details didn't confirm.

DiverXO is Dabiz Muñoz's Hispanoamérica restaurant, Madrid's only three-Michelin-star kitchen and currently No. 4 on The World's 50 Best Restaurants list. Muñoz opened it in 2007, earned his first star in 2010, his third in 2013, and moved the whole operation into the NH Eurobuilding hotel in 2014. He calls the tasting menu La Cocina de los Cerdos Voladores, the cuisine of the flying pigs, and it's rewritten every single service instead of by season, so no two visits run the same courses. Past plates have included xiao long bao in tom kha soup and duck-tongue wafers with caviar, and the kitchen still leans on instincts from that first 2007 menu, when almost nobody in Spain was plating españolizado dim sum. Corral de la Morería Gastronómico is the fine-dining room tucked inside the Corral de la Morería flamenco tablao, open since 1956. Chef David García, from Bilbao, worked under Martín Berasategui and at elBulli, Mugaritz and Nerua before earning a Michelin star at Álbora and taking over this kitchen. The room seats just four tables, never more than eight guests a night, and García cooks a single tasting menu, Menú Compás, built on what he calls cocina de raíz: broths, stocks and juices made from organic produce. It runs 105 euros a person, with two optional wine pairings of nine wines each, Premium at 155 euros and Súper Premium at 255. The restaurant has held a Michelin star since 2019 and added a third Repsol Sol in 2023. The cellar holds more than a thousand Jerez wine references.

Coque is a third-generation family restaurant named for the brothers' grandfather, Álvaro Huertas, a rancher and hunter known as Coque. Their parents opened a rotisserie under that name in Humanes de Madrid in 1976, and chef Mario Sandoval, who trained at elBulli in 1999, moved the restaurant into central Almagro in 2017 with his brothers, Rafael on wine and Juan Diego in the dining room. The signature dish, roasted suckling pig, links today's two-Michelin-star kitchen back to that original rotisserie. Paco Roncero runs the kitchen on the top floor of the Real Casino de Madrid, a room that opened in 1990 as La Terraza del Casino. They took the name from the Greek éter, the sky the ancients counted as a fifth element. Kuoco opened on Calle de San Bartolomé in 2016 as Kuoco 360º, the project of two Venezuelans in Madrid, chef Rafa Bergamo and Andrés Correa. After more than eight years there, it moved in 2025 to a bigger room on Calle del Barquillo. Bergamo calls the cooking a fusion that's timeless rather than classic or avant-garde, drawing on Asia, Latin America and Spain at once. Corral de la Morería has staged flamenco every night since 1956, with the programme curated by bailaora Blanca del Rey. Beyond the show, chef David García's kitchen runs five menu options for dinner in the main tablao room, separate from the building's own four-table gastronomic restaurant. Bichopalo runs from a kitchen barely bigger than a bar's on Calle de Cristóbal Bordíu in Chamberí. Chef Daniel Pozuelo, who trained at Paco Roncero Restaurante, Alboroque, Arzak and DStage, runs the kitchen with his brother Guillermo on the floor. CEBO sits inside Hotel Urban in the Cortes quarter, a 22-seat room led by Javier Sanz and Juan Sahuquillo, the duo also behind Cañitas Maite in Albacete. They took over the kitchen and regained its Michelin star in the 2024 guide, cooking from their own vegetable garden and small producers around the country. Osa opened in 2023 in a converted riverside cottage along the Manzanares in Casa de Campo, and won a Michelin star that same November. Chefs Jorge Muñoz and Sara Peral, both trained at Mugaritz, run a research-minded kitchen: tasting menus organised around what they call product trilogies, backed by a serious charcuterie and aging programme.
