We didn't rank by our own read of the room. Every restaurant here is either tagged intimate, candlelit or romantic in its own Guidavera profile, flagged as good for dates, or named directly by an outlet like MICHELIN, Time Out Madrid, Madrid Secreto or Directo al Paladar as a date spot, with the setting checked against the venue's own address.

### Why do wine cellars and vaulted rooms show up so often?

Central Madrid's older buildings, especially around Cortes and Palacio, sit on genuine 17th- and 18th-century cellar space, and several restaurants, Bodega Los Secretos among them, have restored that brick-and-stone architecture rather than building a dining room from scratch. The low light and private niches that come with a real cellar read as romantic without any added styling.

### What's the difference between a Michelin star and a Michelin Selected listing?

A Michelin star recognises the cooking itself. Selected is a listing inside the MICHELIN Guide that meets the guide's standards but sits outside the star and Bib Gourmand tiers, a mention rather than an award.

## How we built this list

We started with MICHELIN's own "most romantic restaurants in Madrid" list, then read through Time Out Madrid, Madrid Secreto and Directo al Paladar's romantic and Valentine's Day roundups, plus what turned up in a wider search for the keyword. From every source article we pulled the restaurants named and checked each one against our own Madrid database: does the address match, is it currently open and ranked, and does the venue's own profile data (ambiance tags like romantic, intimate or candlelit, or a good_for_dates flag) back up the pairing. We kept only restaurants where that check held up, and we skipped venues that only carried a general good review with nothing specific about the room. One restaurant that multiple outlets named, Villa Capri, doesn't have a Guidavera page yet, so it's left out rather than guessed at. Source quotes below are checked verbatim against the original page; where we couldn't confirm a quote word for word, we left it out and described the room using the venue's own data instead.
