We started from the Madrid restaurants we've profiled whose own address sits on Gran Vía itself or on the named side streets around it, Calle de la Montera, the Fuencarral and Hortaleza starts, Calle de la Libertad, Plaza de Callao, the Plaza de España end and Calle de Alcalá by the Metrópolis building, then checked that list against editorial coverage from Con el Morro Fino and OKDIARIO, skipping aggregators like TripAdvisor, TheFork and OpenTable. A restaurant only made the cut if its own street address places it in or immediately around the area; a couple of venues that share the theme but sit closer to Puerta del Sol or Plaza Mayor were left for that guide instead. Gofio moved in July 2024 to a two-floor space on Calle Caballero de Gracia, just off Gran Vía, after nine years on Calle de Lope de Vega. Chef Safe Cruz, who grew up in a farming family in El Tablero, Tenerife, built the kitchen around the Canarian pantry: rabbit trucha with injected salmorejo and a shrimp dish in cardamom mojo with a creamy millet broth are among the dishes.
