We pulled together Spanish-language coverage of Lavapiés from Guía Repsol's own Soletes listing, the Michelin Guide's restaurant search for the neighbourhood, and independent food blogs and local guides, then checked every name against the Madrid restaurants we've profiled: its address, neighbourhood field and cuisine. A venue only made the numbered list if its own page places it in Lavapiés or the immediately adjoining Embajadores streets and its cuisine matches what the sources describe. A couple of names came up in coverage but didn't make the cut, either because we don't have a page for them yet or because the address on our page didn't match the one in the source, and we've noted those cases rather than guessing. Where a source described a detail we couldn't confirm against the restaurant's own data, we left it out.
