We built this list from five editorial sources covering La Latina dining, cross-checked against the Madrid restaurants we've profiled. A restaurant only made the list if its own address places it on or right around Cava Baja, Cava Alta, Plaza de la Paja, Calle del Almendro, Plaza de la Cebada, Calle de Toledo or Cascorro. Several places named repeatedly by outside sources, including flagship tabernas and a historic cocido house, don't currently have a Guidavera page and are recorded as gaps rather than invented. Where we couldn't verify a specific number, price or date against a restaurant's own listing or a source we could quote directly, we left it out.

Corral de la Morería Gastronómico is the fine-dining room inside the Corral de la Morería, the flamenco tablao that has staged shows every night since 1956. Chef David García, who trained under Martín Berasategui and at elBulli, Mugaritz and Nerua before earning a star at Álbora, cooks what he calls cocina de raíz, Basque-rooted haute cuisine built on broths, stocks and organic produce, for just four tables a night. It has held a Michelin star since 2019 and three Repsol Soles since 2023. The single tasting menu, Menú Compás, runs €105 per person, with two optional wine pairings drawing on a cellar of more than 1,000 Jerez references. Casa Lucio has cooked from Cava Baja 35 since November 1974, when Lucio Blázquez opened it in a building that has held a tavern since 1720. The huevos rotos are the house signature and have been since day one, alongside a Revuelto Lucio of scrambled eggs with wild mushrooms and shrimp and a rotating daily guiso, often lentils or cocido madrileño on Wednesdays. Blázquez, who came to Madrid at twelve to work under an owner who eventually sold him the place, still runs it today alongside his children María del Carmen, Fernando and Javier. La Posada de la Villa serves Castilian roasts on Cava Baja, in a house that dates itself to 1642. Owner Félix Colomo Domínguez rescued the building in 1980 and reopened it after a two-year restoration as a wood-fired roast house; Antonio García Pino manages the dining room today, and César Rubio has cooked at its oven since at least 2021. Tresde runs a Michelin Bib Gourmand kitchen on Cava Alta from chef Aitor Sua, who trained in Paris at Ze Kitchen Galerie under William Ledeuil and at the historic Grand Véfour. It opened in early April 2023. Rather than a tasting menu, which Sua has said he grew 'un poco harto' of, a little tired of, the restaurant runs a streamlined three-course Fórmula EPP (entrante, plato, postre) at €56, with a three-glass wine pairing for €25 more. Marmitón moved at the end of September 2026 from its tiny original kitchen on Calle de las Aguas into the larger Cava Alta 13 space that had housed Barmitón, with a new 'Menú NO Menú' that each diner builds from the day's dishes.
