## How we built this list

We built this list starting from the Chueca and Justicia restaurants we've profiled, then checked it against a Madrid food blog and independent Chueca dining guides to see which of our restaurants got cited and which real gaps we were missing. Every entry here has an address inside Chueca or the streets of Justicia immediately around it, not just a citywide reputation. A few restaurants named repeatedly by outside sources, including Comparte Bistró, aren't currently among the Madrid restaurants we've profiled, and a couple of others we do have on file, Hermanos Vinagre and Cannibal Raw Bar, are staged rather than published yet, so none of the three appear here. Where we couldn't verify a claim against a restaurant's own listing or a source we could quote directly, we left it out rather than guess.

DSTAgE is chef Diego Guerrero's two-Michelin-star restaurant on Calle Regueros, in the Salesas corner of Chueca. Guerrero built two stars at El Club Allard before opening his own place in July 2014, and DSTAgE has held two stars of its own since the 2017 guide; it also carries three Repsol Soles and added a Michelin Green Star in 2025. The room is a two-floor industrial loft with no sign outside, built around an open kitchen. Three tasting menus run here, Dtaste at 16 courses, DSTAgE at 18 and Denjoy at 22, with dishes like a shrimp served on a pink salt stone, a crispy pork bun called Pepe, and a corn dessert called Maíz meant to be eaten by hand. La Llorería is a tiny Justicia restaurant on Calle de San Lorenzo, just four tables and eight bar stools around an open kitchen, run by Carmen Alti and José Certucha, who met working together in a Madrid kitchen and opened it out of that friendship.
