Lhardy has stood on Carrera de San Jerónimo, near Puerta del Sol, since 1839, when the Frenchman Emilio Huguenin Lhardy opened it first as a pastry shop before expanding into full meals. Coque takes up more than 1,000 square metres on Calle del Marqués del Riscal in Almagro, with a sequence of designed rooms that signal the visit goes beyond food alone. Diners move through the building in stages: a cocktail bar, the Ónix passage, an underground wine cellar, a sacristy and the open kitchen, before reaching the dining room itself, a quiet, elegant, refined space with polished service and a wine list the family treats as central. Corral de la Morería Gastronómico is the fine-dining side of the Corral de la Morería, the Madrid flamenco tablao that has run since 1956, founded by Manuel del Rey and now led by his wife, bailaora Blanca del Rey, and their sons Juan Manuel and Armando. The gastronomic restaurant works as its own venue within the same building: a quiet room of just four tables for no more than eight guests, on Calle de la Morería in Palacio, near the Palacio Real and the Teatro Real. Ramón Freixa Tradición occupies the main floor of Velázquez 24 in Recoletos, opened by chef Ramón Freixa in July 2025 alongside his two-Michelin-star Ramón Freixa Atelier in the same building. Le Bistroman Atelier opened in 2019 on Calle de la Amnistía in Palacio, next to the Teatro Real, the project of Stéphane del Río and Miguel Ángel García Marinelli, both sons of French mothers and Spanish fathers who built the menu around the French home cooking they grew up missing. Ovillo occupies a former leather-goods factory in Ciudad Jardín, chef Javier Muñoz-Calero Calderón's first solo project after years with Grupo Azotea, opened in the winter of 2019–20. High ceilings and strong ventilation make the room feel immense and luminous, with round tables spaced out by large planters, industrial but cozy and lit by natural light. Osa opened in 2023 in a converted riverside cottage along the Manzanares, in Casa de Campo, and won a Michelin star that same November. Desborre is chef Lucía Grávalos's personal project near the Teatro Real in Palacio, a small space she rehabilitated with care alongside wood and iron artisans, recovering old bricks, beams and doors for a room that reads cozy and refined rather than showy. Chef Lucía Grávalos opened it in spring 2024 as her second restaurant in Madrid. Kuoco moved in 2025 from its original Kuoco 360º spot on Calle de San Bartolomé, where chef Rafa Bergamo and Andrés Correa opened it in 2016, into a larger room at Calle del Barquillo 30 in Chueca. The new space is industrial, with a metal ventilation structure crossing the original ceiling, a wine cellar on show at the entrance, and, at the back, the black marble bar brought over from the old San Bartolomé room for eating at the bar and cocktails. Smoked Room hides inside Dani García's Leña Madrid, in the Hotel Hyatt Regency Hesperia on Paseo de la Castellana, fourteen seats in total: a Japanese-style bar for six, plus two tables tucked into a semi-hidden reserved area, giving the room a speakeasy feel. Lighting stays dim and the staging theatrical, the open kitchen and counter putting the cooking on full view. Tramo took over what used to be El Garaje Hermético, a well-known venue from Madrid's Movida years, opening in November 2023 on Calle Eugenio Salazar in Ciudad Jardín. Raúl Sánchez is executive chef. Architecture studio Selgascano and designer Andreu Carulla kept the original structure with minimal intervention, reusing the old garage's own materials alongside bioconstruction for an industrial, romantic room with warm lighting.
