## How we built this list

We started from Spanish-language roundups of where Madrid eats breakfast and cross-checked every name against the restaurants we've profiled and their own published hours and menus. A place made the list only if it runs a genuine breakfast service: opening hours that actually cover the morning, plus a breakfast menu, named breakfast items, a buffet or a churros counter, not just a kitchen that happens to be open before noon. Several cafés and bakeries that Spanish breakfast guides cite don't have a Guidavera page yet, so they aren't included here, and a few restaurants we do cover open too late in the day for breakfast, so we left those out rather than stretch the definition. We also added places the roundups don't mention where the venue's own hours and menu show a real breakfast service. Where a venue doesn't publish its breakfast dishes, we don't name any.

Brothers Ismael and Fernando Hevia, the third generation of the family behind Hevia on Serrano (1964), opened it at the start of 2023.
